Key Identification Features
- Large white cap turning yellowish with age
- yellows when cap skin is rubbed (key test)
- pleasant anise-like aroma
- ring with distinctive cogwheel-like gear-tooth pattern on underside
- gills pinkish then chocolate-brown
- found in grassy areas and forest edges
- cap 8-20 cm
Preparation Notes
Excellent edible; one of the best wild Agaricus. Cook thoroughly. Do the yellow-stain test and sniff for anise to confirm. AVOID: Does not turn chrome-yellow (only faint yellow) unlike toxic A. xanthodermus.
